SWEET SNACK - Indian Mango Eton Mess

1 large fresh mango 

300ml double cream

2 tbsp caster sugar

few drops vanilla extract or 1 vanilla pod

4-5 tbsp mango puree/pulp/coulis

small handful chopped pistachio nuts

a small handful of mint leaves 

3 meringue nests (approx 50g)

small serving dessert bowls e.g glass ramekins or trifle bowls

Session description from Tony, "Right, I’m going to do a new world vs old world Sauvignon Blanc tasting called ‘Fun, Wine & Lemons'. You are going to need a slice of lemon, a Sauvignon Blanc from the Loire Valley in France, and another from Marlborough in New Zealand. Both are easily available in any supermarket or wine shop and many will have one of these at home already. Feel free to raid your own cellar, buy some fabulous examples from our city centre friends at Loki or Connolly’s or try one of these bargain supermarket options listed above.  I’m going to explain and demonstrate what a bit of sunshine does for grapes, why it matters how they’re grown, and a bit of magic with a slice of lemon.
